[Lekooks] For all those tomatoes

Roast Tomato Sauce (you'll never make any other kind!)

-Tomatoes (Roma/paste tomatoes work best. If using regular tomatoes, squeeze out some of the juice since you'll have to spoon out juice while they're cooking)
-Onion
-Garlic
-Herbs (basil, oregano, etc.)
-Olive oil
-Salt & pepper

Preheat oven to 425 degrees. Core and cut tomatoes in half and arrange on jelly roll pan, about 1 1/2 layers thick (see pic). Slice onion and arrange on top. Add herbs and drizzle some olive oil over tomatoes. Add salt and pepper.

Bake for 40 - 70 minutes, checking every 10-20 minutes until slightly blackened and the juice is gone (see pic). Put everything into a blender and blend until chunky/smooth. Freezes well.

NOTE: If you are using regular tomatoes, you will have to spoon out hot liquid from the pan as the tomatoes are cooking so the juice doesn't overflow. (When I made this with both roma and regular tomatoes, I spooned out about a cup and a half of juice.)
