This can go for all good foods, not just desserts!</div><div dir="ltr" data-setdir="false"><br></div><div dir="ltr" data-setdir="false">*The recipes I have used are not my own - all of them either discovered online or on the back of chocolate chip packages :)</div><div dir="ltr" data-setdir="false"><br></div><div dir="ltr" data-setdir="false">Gluten-free chocolate chip cookies (July 7th potluck):</div><div dir="ltr" data-setdir="false">-2+1/4 cups gluten-free all purpose flour (I use King Arthur brand)</div><div dir="ltr" data-setdir="false">-1 tsp baking soda</div><div dir="ltr" data-setdir="false">-1/2 tsp salt</div><div dir="ltr" data-setdir="false">-1 cup (2 sticks) butter, softened</div><div dir="ltr" data-setdir="false">-3/4 cup organic cane sugar</div><div dir="ltr" data-setdir="false">-3/4 cup organic brown sugar</div><div dir="ltr" data-setdir="false">-2 tsp vanilla extract</div><div dir="ltr" data-setdir="false">-2 organic eggs</div><div dir="ltr" data-setdir="false">-10 oz 60% cacao chocolate chips (I use Ghirardelli brand)</div><div dir="ltr" data-setdir="false">-OPTIONAL - 1 cup chopped walnuts or pecans</div><div dir="ltr" data-setdir="false"><br></div><div dir="ltr" data-setdir="false">Preheat oven to 375 F. Stir flour with baking soda, and salt, set aside. Beat butter with sugar and brown sugar at medium speed until creamy. Add vanilla and eggs, one at a time, mixing on low speed until incorporated. Gradually blend dry mixture into creamed mixture. Stir in chocolate chips (and nuts if desired). Drop by rounded tablespoon (roll gently into formed balls) onto ungreased cookie sheets. Back for 9 to 11 minutes or until golden brown.</div><div dir="ltr" data-setdir="false"><br></div><div dir="ltr" data-setdir="false">Peanut Butter Cookies (Haskell Party July 13th)</div><div dir="ltr" data-setdir="false">-1/2 cup organic cane sugar</div><div dir="ltr" data-setdir="false">-1/2 cup organic brown sugar</div><div dir="ltr" data-setdir="false">-1/2 cup creamy peanut butter</div><div dir="ltr" data-setdir="false">-1/2 cup (1 stick) butter, softened</div><div dir="ltr" data-setdir="false">-1 organic egg</div><div dir="ltr" data-setdir="false">-1+1/2 cup all purpose organic flour (can substitute with gluten-free flour)</div><div dir="ltr" data-setdir="false">-3/4 tsp baking soda</div><div dir="ltr" data-setdir="false">-1/2 tsp baking powder</div><div dir="ltr" data-setdir="false"><br></div><div dir="ltr" data-setdir="false">Preheat oven to 375 F. Blend first five ingredients with a mixer until smooth, Add flour, baking soda, and baking powder. Roll into balls onto an ungreased cookie sheet. Bake for 8-10 minutes. Cookies should develop a crinkled look on the top.</div><div dir="ltr" data-setdir="false"><br></div><div dir="ltr" data-setdir="false">Gluten-free Oatmeal Chocolate Chunk Cookies with Himalayan Salt Garnish (Haskell Party July 13th)</div><div dir="ltr" data-setdir="false">-2 cups gluten-free flour (can substitute with all purpose flour)</div><div dir="ltr" data-setdir="false">-1 cup organic rolled oats</div><div dir="ltr" data-setdir="false">-1 tsp baking powder</div><div dir="ltr" data-setdir="false">-1/2 tsp ground organic cinnamon</div><div dir="ltr" data-setdir="false">-1/2 tsp sea salt</div><div dir="ltr" data-setdir="false">-1 cup organic brown sugar</div><div dir="ltr" data-setdir="false">-1/2 cup organic cane sugar</div><div dir="ltr" data-setdir="false">-1 cup (2 sticks) butter, softened</div><div dir="ltr" data-setdir="false">-2 organic eggs</div><div dir="ltr" data-setdir="false">-1 10 oz package dark chocolate chunks (see photo included for reference)</div><div dir="ltr" data-setdir="false">-OPTIONAL 1 cup chopped walnuts</div><div dir="ltr" data-setdir="false">-fine ground Himalayan pink salt</div><div dir="ltr" data-setdir="false"><br></div><div dir="ltr" data-setdir="false">Preheat oven to 350 F. In a small mixing bowl, combine flour, oats, baking powder, cinnamon, and sea salt. In a separate large mixing bowl, combine the brown sugar, sugar, and butter. Beat well and then add the eggs one at a time, along with vanilla. Turn mixer speed to low and gradually add the flour/oat mixture to the creamed mixture until well combined. Fold in the chocolate chunks (and walnuts if desired). Drop by rounded tablespoon (roll into formed balls) onto an ungreased cookie sheet. Bake for 12-13 minutes. **When the cookies come out of the oven, immediately sprinkle the Himalayan pink salt onto each cookie before transferring to wire rack to cool - it's important to do this right away, otherwise the salt doesn't stick to the cookie.
